Every day our school food service dietitians and nutritionists face a big and very important job -- to plan, purchase, prepare, and serve nourishing meals to our students. They are our first-line of defense, our vital link to the children and today, that role is more important than ever. They are in a special position to show children what it means to eat for good health, including how important it is to eat a variety of foods and more fruits and vegetables of all kinds.

They know that processed tomatoes are high in vitamin C, a good source of vitamin A, and bring some very potent phytochemicals and antioxidants to the table. You will find a lot of tomatoes in the meals we serve in our cafeterias.

We are so proud of them and so grateful for the benefits their efforts provide to our students that we are pleased to honor them by joining with the California Tomato Growers to feature some of their favorite recipes here.
